This month Duke, my mom and I were fortunate enough to harvest the elusive morel mushroom. This super food contains great nutrients including Iron, Copper, Manganese, Phosphorus, Zinc, Vitamin D, Folate, Niacin, Riboflavin and a decent dose of Potassium, Magnesium, Calcium, Selenium, Thiamine, Vitamins E and B6. The taste is extraordinaire and reminds me personally of seal intestine or kak. Other times fried in butter it is reminiscent of seafood. Really it’s just a very tasty mushroom.
